FAQs About Lemon Peels

These answers provide clarity on product quality, processing, and international shipment for buyers.

DITCO offers a variety of standardized cuts to suit different manufacturing requirements. Our range includes Lemon Peel Strips/Ribbons (5–10mm) for craft distilleries, Tea Bag Cut (TBC) (1–3mm) for high-speed herbal infusion packing, Lemon Peel Nibs (3–5mm) for gourmet confectionery, and Fine Powder (60–80 mesh) for the cosmetic and seasoning industries. Each batch is air-sifted and vibrated to ensure a uniform particle size and the removal of “fines” or dust.

The quality of dried lemon peel is measured by its volatile oil retention. Our technical-grade peels typically feature an essential oil content of 1.5% to 3.0%. The primary chemical markers are D-Limonene (60–70%) and Citral (Neral + Geranial), which provides the characteristic fresh, sharp citrus aroma. We utilize low-temperature dehydration to lock in these volatile esters, ensuring they do not evaporate during the drying process.

In the distillery and beverage sectors, the presence of too much albedo (the white inner pith) can introduce unwanted bitterness and cloudiness. DITCO utilizes specialized peeling technology and mechanical separation to maximize the percentage of the flavedo (the oil-rich outer zest). This ensures a “clean-cut” product that provides a bright, sweet citrus note without the tannic bitterness associated with lower-grade citrus products.

Citrus skins are highly monitored for agricultural residues. DITCO complies with EU Regulation (EC) No 396/2005 and FDA Maximum Residue Limits (MRLs). We implement a rigorous screening process in accredited laboratories to test for fungicides and pesticides commonly used in citrus farming. Our “clean-label” focus ensures that our dried lemon peels are safe for use in food, beverage, and skincare applications globally.

Color is a key indicator of freshness and proper processing. To prevent enzymatic browning and oxidation, we use a controlled-environment dehydration system. This process carefully manages the temperature-to-humidity ratio, preserving the natural pigments (carotenoids and flavonoids) and Vitamin C content. Our lemon peels are maintained at a moisture level of max 12%, ensuring long-term color stability and microbiological safety.

Dried lemon peel is highly susceptible to “flavor scalping” (absorbing surrounding odors) and essential oil loss. We pack our bulk products in multi-wall kraft paper bags with food-grade polyethylene (PE) liners or foil-lined bags to provide an oxygen and light barrier. For an optimal shelf life of 24 months, it is technically recommended to store the product in a cool ($<15$°C), dry, and dark warehouse. Proper sealing after each use is vital to maintain the volatile citral levels.
